It has been one of those days – I did two meeting before 10 am and since then have been heads down, answering emails and reviewing board decks and preparing for a slew of board meetings. I normally get into the zone, I tend to work from home — thank you WebPass for that awesome 250 Mbps connection.

Being short on time, I made my favorite fast food: egg whites mixed with spicy Pico de Gallo, and microwaved for 2 minutes. It is perfect egg dish – without any oil. A little Siracha was enough to turn up the heat. And to top it off, a glass of fresh watermelon juice and a granny apple.

I feel full and virtuous, especially as I plan for a Chinese New Year celebration with my buddy Jared Kim. It has been extremely warm these past few days, so it is actually nice to eat ahead of light.

Do you have any other carb-free quick recipes for lunch — especially for someone like me who doesn’t like to cook.
